Job description:

Head Chef

Job description:
We’re recruiting a new Head Chef for the first time in 12 years, in a daytime (8am-4pm) permanent 40hr/week position. The role incorporates prep-kitchen and café cheffing alongside menu design, staffing and kitchen administration.
Our kitchen setup is unusual, as the expansion of the business over 15 years has only been possible with the addition of satellite kitchens and we currently operate from 3 kitchens within 2 minutes of each other, each providing a different function. The smallest (in the shop) operates with just one or two staff pre-making sandwiches and cooking off savoury pastries. The café kitchen is all stove-based cooking from an all-day brunch menu that changes seasonally. Our main prep kitchen supplies many ingredients to the two smaller kitchens as well as a high volume of pre-potted salads, sweet baking, catering for delivery and a range of products packaged for retail in our shop.
This is a very unique and exciting Head Chef position as the variety of output offers a great opportunity for creativity, be it with the café, takeaway and catering menus, or interesting retail products.
We are looking for someone who:
- is creative, with lots of seasonal menu-writing and cooking experience
- has depth of cookery experience across deli, brunch or food retail sites in a high-end quality business or brand
- has the confidence and depth of experience to manage the challenges of working across three kitchens successfully
- ideally has some outside catering experience
- is able to demonstrate excellent leadership and team management
- has a good awareness of industry trends to keep our offering contemporary and fresh
- enjoys working with the front-of-house team to drive the business forward
- has a willingness to embrace all the elements of a wide-ranging role
The role reports directly into the owner and responsibilities will include:
- Creative menu writing and product development
- Food costing and GP maintenance
- Managing and developing a team of 13
- Kitchen administration, including staff schedules and managing holiday & sickness entitlement
- Recruitment for all kitchen roles
- HACCP & H&S management across all three kitchens
- Equipment purchasing and management of maintenance within the kitchens
